Ingredients

  • 2 Avocados
  • 12 pound Gulf Coast jumbo lump crabmeat
  • 12 cup mayonnaise
  • 1 tsp. Dijon mustard
  • 14 cup capers
  • pinch salt
  • cracked pepper
  • pinch cayenne
  • 2 tsp. lemon juice
  • 18 cup green onion, chopped
  • mixed greens
  • chopped green onions for garnish as desired

Directions

  1. Add crabmeat, mayonnaise, Dijon mustard, capers, green onions, salt, cracked pepper, cayenne pepper, and lemon juice in bowl. Fold ingredients together until well mixed.
  2. Halve avocados, remove seed and peel skin. Place avocados on bed of mixed greens. Spoon crabmeat evenly into halves. Garnish with chopped green onions.
